The Cotentin and Bessin marshes offer summer grazing subject to strict usage rules. The west coast, from Granville to Carentan, captures most of the visitor traffic.

That pattern shapes the project: a unit near the shore or close to Avranches has an immediate seasonal outlet, whereas the inland hedged country allows more forage ground to be bought, provided you accept longer selling rounds and the work of building a reputation from scratch.

The essential checks

The classified installations regime, the French environmental permitting system, applies above the herd threshold set in the nomenclature, with declaration and then registration for larger flocks, and notice to the prefecture when the operator changes. A dairy must be covered by health approval or by the direct retail exemption, with a food safety plan, traceability and own-checks to be produced before the sale. As the department is classed as a nitrate vulnerable zone, effluent storage capacity and the spreading plan must stay consistent with the land actually taken on.
