The quality of the wines of the Deux-Sèvres depends on many factors: the soil, the exposure, the grape varieties, the work of the vines, the vinification and the climatic particularities of each year. Each wine estate makes its own choice of grape varieties according to the regulations of its Protected Designation of Origin but also according to the properties of the soil and its geographical location.
