In Côte-d'Or, the scarcity of climats produces prices without equivalent in France; a few cru sales are enough to spike annual averages. In the Yonne, Chablis imposes its Kimmeridgian hierarchy, from Petit Chablis to grand cru. In Saône-et-Loire, the region's highest transaction volume reflects a fluid, accessible growers' market.
Across the vineyard, demand structurally exceeds supply: surfaces free up at the slow pace of successions, and quality files often trade off-market — hence the importance of alerts and targeted exposure.
